What are the benefits you are looking for by proxying Fiori through SMP?

The document you are using is the right one if you only need to use SMP as a proxy server. In this case you will not get all the benefits of SMP server. ex. offline feature.

If your requirement include offline you need to create a cordova based hybrid mobile app and use the kapsel plugins - Getting Started with Kapsel - Part 1 (SP09+)
